Dried anchovies export in Vietnam
For a long time, every harvest season, domestic seafood businesses have steamed anchovies and packaged them for export to many countries, especially places where many Asian communities live.
According to many fishermen, in previous years, after being caught, anchovies were mainly used to make fish sauce. However, in recent years, people and owners of anchovy processing facilities have "transformed" anchovies into more diverse products, thereby increasing the price of anchovies, creating a decent source of income for coastal people specializing in catching and processing anchovies. Dried anchovies are increasingly popular in domestic and foreign markets, so many factories already prepare fish from early morning to late at night to race for the anchovy season.
According to the Vietnam Association of Seafood Exporters and Producers (VASEP), in April 2023 only, the export of all types of Vietnam dried fish increased by 65%, reaching nearly 26 million USD. Cumulatively in the first 4 months of the year, this product has earned nearly 78 million USD, an increase of 33% compared to the same period in 2022. The two most popular types of Vietnamese dried fish today are anchovies accounting for 66%, and yellow trevally accounting for 14%.
Dried anchovy fish processing
To increase the value of anchovies caught from Hoang Sa fishing grounds, many anchovy processing facility owners in Tinh Ky commune, Quang Ngai city have proactively processed, prepared, and preserved anchovies to retain their freshness. Fresh longer, exported to China, Malaysia... at many times higher prices.
To get finished batches of dried anchovies, the fish must first be washed, spread evenly on the grill, and then put into the steamer. After being cooked, it is brought out to dry in the sun, and must be continuously turned to keep the fish fresh and firm.
