CHARACTERISTICS OF VIETNAMESE GINGER THAT YOU SHOULD KNOW WHEN BUYING
Ginger is a plant whose underground stem known as Rhizome, is part of the family Zingiberaceae that comprises turmeric cardamom and galangal. It is usually applied as a spice or herbal medication. There are four main types of ginger that are commonly traded and used: fresh, dried, frozen and powder.
Cultivation conditions
In Vietnam, ginger is grown everywhere from North to South and is commonly grown at altitudes of 700-800m and below, where there is humidity. In high mountainous areas, the cold climate often has frost, so growing Ginger is ineffective. In some northern provinces, ginger is grown concentratedly on a relatively large area, under the canopy of orchards, and under the canopy of forests.
Ginger plants grow best at temperatures above 20 degrees Celsius. Therefore, the best ginger growing season for the Northern provinces should be planted in early spring, which means planting from February to March every year. Currently, there are many types of ginger with good yield and quality, but the most popular varieties are Buffalo ginger and Gié ginger.
- Buffalo ginger: Large ginger root, weighing 100 grams or more. Buffalo ginger is a large root with few branches, light veins, not spicy and fibrous like common ginger, but has a lot of juice and a fat stem. Buffalo ginger is widely used in the production of ginger, confectionery, ginger tea production... Harvest and supply time: from September to February and sporadically until June. Buffalo Ginger is a very high-yielding Ginger variety, which can reach 50-80 tons/ha (average yield 60 tons/ha)
One of the most obvious advantages of buffalo ginger is that it is easy to prepare because the root is large and beautiful. In addition, if you do not like the spicy taste of sparrow ginger but still want the aroma of ginger in your food, buffalo ginger is also not a bad choice for you.
- Gié Ginger: is a small ginger root with many veins and a characteristic aroma. It has a higher zingiberen essential oil content than regular fresh ginger. From 1 ton of ginger, only 1kg of ginger can be picked out.
During the ginger plant's growing stage
Ginger is a herbaceous, perennial plant, 0.6 - 1m tall. The leaves are dark green, 15 - 20 cm long, about 2 cm wide, the surface is smooth, the veins are slightly light, the leaves grow alternately, upright, with leaf sheaths, no stems. The underground stem is swollen and contains nutrients called a tuber. Around the tuber there are hairy roots. Roots and tubers only grow concentrated in the top layer of soil, 0-15 cm deep. Ginger plants rarely flower, the flower axis grows from the base, 15 - 20 cm long. The flower is yellow-green, 5cm long, 2 - 3cm wide, has 3 petals about 2cm long, petal edges and purple stamens.
Although ginger has recently become a plant with quite high economic value, the ginger plant is also susceptible to a number of diseases such as tuber, root, and stem rot caused by the fungus Rhizoctonia solani or the bacteria Erwinia carotovora; Leaf blight caused by the fungus Piricularia grisea causes tubers to be small and few, reducing yield when harvested.
After 7-8 months of planting, the ginger tree will become old, the leaves will wither and fall off. At this time, the ginger is still young ginger, often purchased by Japan and Korea to make Gari (pickled sushi ginger). When the ginger reaches 10 months of age or more, the ginger is no longer pink, the skin is thick and shiny, and after washing it does not peel off, it has met export standards in many different countries, including Bangladesh - our valuable partners.
