While various types of ginger share the common benefits of imparting fragrance and promoting health, each type cultivated in different countries exhibits distinct characteristics. Examples include Vietnamese ginger and Chinese ginger.

-  Size: Chinese ginger is way bigger, about 2-3 times the size. Chinese ginger roots weigh around 3-5 grams, while Vietnamese ginger is only 0.5-1.5 grams.

 

-  Shape: Chinese ginger looks fancier with a big middle stem and fewer, rounder branches, unlike the smaller, spindlier ones on Vietnamese ginger.

 

 

-  Color: Chinese ginger is light yellow and super clean, no soil left. Vietnamese ginger keeps a yellow or dark brown color, often with soil still on it.

 

-  Shell: Chinese ginger peel is smooth and easy to scrape, but Vietnamese ginger has a rougher skin with many eyes and cracks, making it tougher to peel.

 

 

-  Ginger Core: Chinese ginger core isn't as colorful, with faint veins and less fiber. Vietnamese ginger core is dark yellow, with clear veins and more fiber.

 

-  Smell: To tell them apart by taste, remember, Chinese ginger may look good and be easy to prep, but it has a mild flavor. You need a lot for the taste. Vietnamese ginger is spicy, fragrant, and has a unique flavor, whether eaten alone or used as a spice in dishes.
